It’s a little over the top. Just how we like it.
This isn’t just a dessert - it’s a spectacle. A pink-hued, chocolate-drenched, ice-cream-filled tower of joy that laughs in the face of minimalism. It’s what happens when meringue gets all dressed up, raids the freezer, smashes the biscuit tin, and invites Folc Rosé along for the ride.
Grab your spoons (and your nicest glasses). Things are about to get deliciously messy.

Prep Time: 15–20 minutes
You’ll need:
- 1 box of The Glorious Mess Strawberry Meringue Nests (4 nests per box)
- Strawberry ice cream (as generous as you feel)
- A handful of fresh strawberries, halved or whole
- 200g dark chocolate (for dipping)
- 2 waffle cones
- 2 tbsps. edible dried rose petals
- A bottle of chilled Folc Rosé (essential)
Putting it all together:
- Melt the dark chocolate in a bain-marie until smooth and glossy. Dip each strawberry nest halfway, letting the chocolate set in a rich, even layer. Leave for a few minutes for the chocolate to set.
- Place your meringue nests on a serving plate. Spoon generous swirls of strawberry ice cream onto each one until they are full to bursting.
- Break up your waffle cones and tuck the pieces into the layers. They don’t need to be neat - this is all about relaxed indulgence.
- Scatter fresh strawberries and rose petals over the top. You could stop here, but why would you?
- Serve with Folc. Best enjoyed with a glass of chilled Folc Rosé in hand. Fruity, fresh, and a little bit fancy - the perfect match.
