It’s the perfect no-bake winter pudding, ideal for festive gatherings, last-minute dinner parties or when you simply need a quick apple crumble dessert with a playful twist. Comforting, crunchy and crowned with caramel… this one brings all the cosy warmth of winter in every spoonful.
Serves 4
You’ll need:
4 The Glorious Mess Caramel Meringue Nests
Salted caramel sauce, to serve
2 apples, peeled, cored and diced
½ tsp cinnamon
Juice of ½ lemon
50g caster sugar
1 tbsp butter
2 tbsp water
For the toasted buttery oats
1 tbsp butter
1 tbsp dark brown soft sugar
½ tsp cinnamon
75g jumbo oats
Pinch of salt
For the brown sugar cream
300ml double cream
3 tbsp dark brown soft sugar
2 tsp vanilla paste

Putting it together:
1. Pop everything into a saucepan over medium–high heat and let it bubble away for about 8 minutes. You’re looking for soft apples coated in a glossy, cinnamon-spiked syrup. Once they’re looking dreamy, set them aside to cool.
2. Melt the butter, sugar and cinnamon in a small frying pan, then tumble in the oats with a pinch of salt. Give them a good toss and cook for around 5 minutes until they’re crisp, golden and smelling far too tempting. Leave to cool before you snack on them all.
3. Whip the cream, dark brown sugar and vanilla until soft peaks appear - thick, luxurious and ready to be spooned onto something delicious.
4. Swirl a generous cloud of cream into each meringue nest, pile on the cinnamon apples, scatter over the buttery oat crumble and finish with a glossy drizzle of salted caramel.
