Spiced Apple Eton Mess Nests

This pudding’s got drama — and it’s dangerously easy to throw together. Pile up buttery cinnamon apples, lashings of custard, juicy figs, bold blackberries and a cheeky splash of golden caramel… all on a nest of meringue that looks like you’ve spent hours (you haven’t). It’s comfort. It’s glorious. It’s unapologetically extra.

 

You’ll Need (serves 4):

•    4x The Glorious Mess Caramel Meringue Nests
•    1 crisp apple (like Braeburn or Pink Lady), thinly sliced
•    1 tbsp butter
•    1 tbsp soft brown sugar
•    A pinch of cinnamon
•    200ml good-quality vanilla custard (ready-made is just fine)
•    A handful of fresh blackberries
•    2 ripe figs, quartered
•    Caramel or toffee sauce, for drizzling

 

Putting It All Together:


1. Melt the butter in a small pan over a medium heat. Add the sliced apple, brown sugar and cinnamon. Let it bubble gently for 5–7 minutes, until everything’s soft and golden. Set aside to cool slightly.


2. Spoon a generous helping of vanilla custard into the centre of each meringue nest — no need to be too neat.


3. Tuck in the warm apple slices, then top with a few blackberries and quarters of fresh fig. Play around until it looks as glorious as it tastes.


4. Finish with a slow drizzle of caramel sauce. Serve immediately, and watch them be devoured in seconds!

A Glorious Tip: Warm the custard ever so slightly before assembling if you're after something extra cosy — perfect for chilly evenings or an impromptu pudding moment.
