Our naturally pink Strawberry Meringue Nests bring the crunch, while clouds of whipped vanilla cream and a tumble of fresh fruit turn it into a dessert worth swooning over. No oven. No faff. Just outrageously pretty pudding that’s ready to steal the spotlight.
What You’ll Need (Serves 4):
• 4 Strawberry Meringue Nests (from The Glorious Mess, of course)
• 200ml double cream
• 1 tsp vanilla extract
• 4 fresh figs, quartered
• 100g blueberries
• 100g blackberries
• 4–5 strawberries, halved or sliced
• A dusting of icing sugar, to finish
Putting it together:
1. In a bowl, whisk the cream and vanilla until soft peaks form. Think pillowy clouds, not stiff peaks.
2. Spoon or pipe a generous swirl of the whipped cream into the centre of each meringue nest. Don't worry about being too neat.
3. Fruit your fancy - pile on the figs, berries, and strawberries however you like. Go for colour, texture, and pure fruity joy.
4. Right before serving, give it a light snowfall of icing sugar.
