Ingredients (serves 4):

4x The Glorious Mess Caramel Meringue Nests
200ml double cream
1 tsp vanilla extract
150g blueberries
150g strawberries, hulled and sliced
A handful of chopped nuts for added crunch
Caramel sauce

 

Putting it together:

1. In a bowl, whip up the double cream with the vanilla until soft peaks form. You want it light and fluffy, not stiff!

2. Grab 4 dessert glasses or bowls, and start layering: a spoonful of whipped cream, a handful of mixed summer berries, and crumbled caramel meringue. Repeat once more: cream, berries, meringue.

3. Top off your dessert with a few extra berries, a sprinkle of chopped nuts and a good drizzle of caramel sauce.
