Not-So-Messy Eton Dessert

Not-So-Messy Eton Dessert

Forget dainty patisserie vibes. These strawberry meringue nests weren’t piped in some Parisian kitchen — but they sure look like it. Light, crisp, and hand-finished with flair, they’re just begging for a wild swirl of cream and a reckless tumble of berries.

No stress. No fuss. Just pure dessert drama.

Keep a box in the cupboard and you're ready to whip up a jaw-dropping showpiece any time — for guests, date night, or just because Tuesday deserved better. Messy? Maybe. Glorious? Absolutely.

You’ll Need (serves 4):
•    4x The Glorious Mess Strawberry Meringue Nests
•    100ml double cream
•    ¼ tsp vanilla extract (optional but lovely)
•    A handful of ripe strawberries, hulled and sliced
•    Fresh mint or basil, to garnish
•    A final flurry of icing sugar

Putting It All Together:

1. In a mixing bowl, whip the cream and vanilla until it holds soft peaks. You’re aiming for elegant, not overwhipped.

2. Gently spoon (or pipe, if you’re feeling fancy) the cream into each meringue nest.

3. Top with plenty of sliced strawberries – juicy, ripe ones are best.

4. Finish with a sprig of mint or basil and a dusting of icing sugar.

5. Crisp shell, billowy cream, bright berries – dig in and enjoy. Made all the more glorious when shared.
