Golden caramel crunch, whipped mascarpone chaos, and boozy cherries that don’t play nice. This is pudding with attitude — all the wow, none of the faff. Make it for guests (they’ll lose their minds). Make it for yourself (you deserve it). Just make it messy.
Ingredients (Serves 4):
• 4x The Glorious Mess Caramel Meringue Nests
• 200ml double cream
• 150g mascarpone
• 2 tsp vanilla extract
• 12–16 macchiato cherries, plus a drizzle of their syrup
• A few dark chocolate curls (a vegetable peeler works wonders)
Putting it together:
1. In a bowl, whisk together the cream, mascarpone and vanilla until softly whipped and cloud-like. Don’t overdo it – you want soft, not stiff.
2. Spoon or pipe the whipped mascarpone into the centre of each caramel meringue nest. No need to be too neat. This is The Glorious Mess, after all!
3. Add 3–4 macchiato cherries to each nest and let that deep red syrup drizzle wherever it pleases.
4. Scatter a few dark chocolate curls over the top.
5. Serve immediately. Best eaten as soon as assembled. Think crisp, creamy, tangy, sweet… all at once.
