This is what happens when breakfast gets out of hand-in the best possible way. Think golden fried brioche, whipped cream clouds, juicy mango and strawberries, all piled around a crisp Strawberry Meringue Nest. Finished with a flirty dusting of icing sugar, it’s dramatic, delicious, and totally over the top. You could serve it with cutlery, but no promises it’ll stay neat.
Ingredients
4 slices of brioche, folded and fried
200ml whipped cream
4 TGM Strawberry Meringue Nests
1 ripe mango, chopped into chunks
A handful of fresh strawberries, halved or quartered
Icing sugar, for dusting
Putting it together:
- Lightly pan-fry folded brioche slices in a little butter until golden and crisp on the outside, but still soft and pillowy inside. Tear them into rough chunks and set aside.
- Place your Strawberry Meringue Nests onto a big platter or individual plates. Fill them with generous dollops of whipped cream.
- Start layering: fried brioche chunks, mango cubes, and juicy strawberries. More is more—pile it up and don’t hold back.
- Dust with icing sugar like it’s snowing sugar and you’re feeling theatrical. Serve immediately.
