We’re talking caramelised peaches, swoops of elderflower cream, crisp strawberry meringue - and coulis running wild in all the right places.
It’s fruity, flirty, and just the right amount of over-the-top.
No prep, no panic - just grab a box and whip up something wildly good in minutes.
Messy? Obviously.
Ordinary? Never.
Delicious? Without question.
You’ll need
- 4 Glorious Mess Strawberry Meringue Nests
- 200ml double cream
- 1 tbsp elderflower cordial
- ½ tsp vanilla bean paste (or extract)
- 2 ripe peaches, stoned and sliced into chunky wedges
- 150g fresh strawberries, halved or quartered
- 4 tbsp strawberry coulis
Make the Mess
- Pour the cream into a bowl and add the elderflower cordial and vanilla. Whip until it’s just holding soft peaks - light and ready to dollop.
- Heat up a griddle pan until it’s nice and hot. Add the peach wedges and give them a minute or two each side until they’ve got golden char lines. Set aside to cool slightly.
- Place a meringue nest on each plate. Spoon in a big, unapologetic helping of cream. Pile on the peaches and strawberries.
- Drizzle each one with a tablespoon of strawberry coulis. Let it drip, drizzle, and swirl however it wants. Perfection is overrated.
